All you guys talk about meatless diets, but don't we need some form of protien: ie beans/cheese/rice? I have no clue where to start or if I need to supplement because of the no meat thing. Can you share your meatless diet secrets with those of us who have always loved meat but don't want to kill animals anymore? I'd sure appreciate the help. I want to be in the first wave. ~ Jennifer
Jennifer, I stopped eating red meat when I was 29. I recognized the fact that I would not be able to kill the animal ... I just purchased packaged pieces from the the killer of animals. I had to face reality and be honest with my Self.
I still ate seafood, and rarely, if I "had to," chicken. However, the seafood was not really that appealing, so when Zorra/Father God told us to eliminate meat, seafood and the yolk of the egg, it was fine with me. I still use dairy ... organic whole milk (never use over-processed "low fat" or "no fat" -- just another ploy to make people sick), cheese, yogurt, butter, etc., all okay.
On the Okay List:
Whole Organic Milk. - I suddenly remembered Ovaltine, which all the other kids drank while I grew up on black coffee, with my German Mom. ;-) Actually that was better, as now they know that drinking a lot of milk actually depletes our calcium reserves.
Cheese - Sauce on brocolli and other vegetables, or in soup, on homemade pizza, with "apples and cheese," with egg whites (buy them in a carton) to make omelettes
Homemade Pizza - 2 halves of whole grain English Muffin, tomato slice spiced with garlic, Himalayan Sea Salt, oregano, basil - braise tomatoe, then top with slice of fresh mozzarella cheese topped with chopped grreen pepper and what ever...
Eggplant Parmesan - Braise oiled egglant slices - add favorite sauce and mozzarella chees slice - repeat eggplant, sauce, chees - finish with browned bread crumbs!
Yogurt Fruit Salad with pieces of grapefruit, orange, sweetened shredded coconut, organic walnuts, organic blackberries, organic raspberries. Make it ahead and it is good to snack on. It keeps.
Heuvos Ranchero - Fluffy egg white atop corn tortillas, refried beans, shredded cheese, enchilada sauce, garnished with chopped green onions and chopped fresh tomato
Bean/Cheese Burro - Heat refried beans and shredded cheese, fold into warmed flour tortilla.
Vegetarian Chili - Heat one can vegetarian chili, one can chili beans, add diced fresh tomatoes.
Potato - Soup, pancakes, fried with onions, hash browns, mashed ahead of time and as side dish with ... say, veggie burger with grilled onions.
Baked Potato with sour cream, butter, cheese sauce and brocolli, etc.
Baked Sweet Potato - Yam
Then there is Chinese Stir Fry ... add cashews ...
Fresh Sprouts - To garnish Chinese, sandwiches, salads ...
Bean Soup is yummy and good for leftovers. Add cornbread.
Bean Salad - Mix canned beans ... kidney, green, various, add chopped celery, chopped onions, pickle relish to taste. Do not pour off bean juice.
All kinds of nuts ... especially organic walnuts, almonds and almond butter!
Oh, have you tried the FRESH Spaghetti Sauce in the refrigerated section:... usually by the cheeses? Also Alfredo and Pesto sauce? Remember, canned tomatoes are a no-no! They react with the can.
So, you have all kinds of fresh pastas and fresh sauces. Get creative! Tastes as good as Olive Garden!
Zorra told us we really don't need that much protein, now that we have adult bodies...
